Hey, y'all! In the warmer months, there's nothing more delicious than food off of the grill. As corn is one of my favorite grilled vegetables, I decided to make a grilled corn salad the other day - I know y'all are going to love it as much as I do!
Grilled Corn Salad

Grilled Corn Salad Ingredients
- 6 ears of corn, husks removed
- 1 avocado, chopped
- 1 ½ c. cherry tomatoes, quartered
- ¾ red onion, diced
- ¼ c. extra-virgin olive oil (extra for brushing the corn pre-grilling)
- ⅓ c. lime juice
- 2 tbsp. fresh basil
- 2 tsp. minced garlic
- 1 tsp. red pepper flakes
- kosher salt, to taste
- black pepper, to taste

How to Make Grilled Corn Salad
- Preheat grill to medium-high. Remove corn husks and silks. Brush each corn cob with olive oil and season with salt.
- Grill corn until each side has a light char, roughly 8-10 minutes. Remove corn from the grill and allow it to cool. Once cooled, slice the kernels off the cob.
- In a large mixing bowl, combine corn, tomatoes, onion, and basil.
- Make the dressing. Whisk together olive oil, lime juice, minced garlic, black pepper, red pepper flakes, and additional kosher salt. Pour dressing over the corn mixture and stir until fully-incorporated. Fold in chopped avocado and serve!

Pro Tips For Making This Recipe
- The char on the corn really makes this recipe; be sure to leave it on the grill long enough to get a nice char!
- Be sure to remove all of the silks from the corn prior to grilling/making the salad.
- I like to fold in the avocado at the end, as it is more fragile of an ingredient.
- You can serve this grilled corn salad alone as a side dish, on top of grilled steak, or served as a dip with tortilla chips.
