Grilled Corn Salad

Hey, y'all! In the warmer months, there's nothing more delicious than food off of the grill. As corn is one of my favorite grilled vegetables, I decided to make a grilled corn salad the other day - I know y'all are going to love it as much as I do!

Grilled Corn Salad Ingredients

  • 6 ears of corn, husks removed
  • 1 avocado, chopped
  • 1 ½ c. cherry tomatoes, quartered
  • ¾ red onion, diced
  • ¼ c. extra-virgin olive oil (extra for brushing the corn pre-grilling)
  • ⅓ c. lime juice
  • 2 tbsp. fresh basil
  • 2 tsp. minced garlic
  • 1 tsp. red pepper flakes
  • kosher salt, to taste
  • black pepper, to taste

How to Make Grilled Corn Salad

  1. Preheat grill to medium-high. Remove corn husks and silks. Brush each corn cob with olive oil and season with salt.
  2. Grill corn until each side has a light char, roughly 8-10 minutes. Remove corn from the grill and allow it to cool. Once cooled, slice the kernels off the cob.
  3. In a large mixing bowl, combine corn, tomatoes, onion, and basil.
  4. Make the dressing. Whisk together olive oil, lime juice, minced garlic, black pepper, red pepper flakes, and additional kosher salt. Pour dressing over the corn mixture and stir until fully-incorporated. Fold in chopped avocado and serve!

Pro Tips For Making This Recipe

  1. The char on the corn really makes this recipe; be sure to leave it on the grill long enough to get a nice char!
  2. Be sure to remove all of the silks from the corn prior to grilling/making the salad.
  3. I like to fold in the avocado at the end, as it is more fragile of an ingredient.
  4. You can serve this grilled corn salad alone as a side dish, on top of grilled steak, or served as a dip with tortilla chips.
