- 6 ears of corn husks removed
- 1 avocado chopped
- 1 ½ c. cherry tomatoes quartered
- ¾ red onion diced
- ¼ c. extra-virgin olive oil extra for brushing the corn pre-grilling
- ⅓ c. lime juice
- 2 tbsp. fresh basil
- 2 tsp. minced garlic
- 1 tsp. red pepper flakes
- kosher salt to taste
- black pepper to taste
The char on the corn really makes this recipe; be sure to leave it on the grill long enough to get a nice char!
Be sure to remove all of the silks from the corn prior to grilling/making the salad.
I like to fold in the avocado at the end, as it is more fragile of an ingredient.
You can serve this grilled corn salad alone as a side dish, on top of grilled steak, or served as a dip with tortilla chips.
