Ingredients
  

  • 6 ears of corn husks removed
  • 1 avocado chopped
  • 1 ½ c. cherry tomatoes quartered
  • ¾ red onion diced
  • ¼ c. extra-virgin olive oil extra for brushing the corn pre-grilling
  • c. lime juice
  • 2 tbsp. fresh basil
  • 2 tsp. minced garlic
  • 1 tsp. red pepper flakes
  • kosher salt to taste
  • black pepper to taste

Instructions
 

  • The char on the corn really makes this recipe; be sure to leave it on the grill long enough to get a nice char!
  • Be sure to remove all of the silks from the corn prior to grilling/making the salad.
  • I like to fold in the avocado at the end, as it is more fragile of an ingredient.
  • You can serve this grilled corn salad alone as a side dish, on top of grilled steak, or served as a dip with tortilla chips.
