Frito Corn Salad

Hey, y'all! If you've been to a potluck or a church dinner in the south, you've probably had this dish. While immensely simple, it has always been one of my favorites. Growing up, I would have to force myself to not make an entire plate out of it; I also had to incorporate from meat + vegetables. It's just simply that good. I'm so excited to share the recipe for my Frito Corn Salad with y'all today. I know you're going to love it!

This recipe is dedicated to my Aunt Jessie, who always made this for me. Love you, Jess!

Tips/Tricks

  • Use a full-fat mayonnaise when making Frito Corn Salad, as it has a better flavor profile. I recommend Duke's.
  • Do not put the crushed fritos into the salad until you are ready to serve; this will ensure that they stay crunchy and do not become soggy too quickly.

  • 2 cans whole kernel corn
  • sharp cheddar cheese
  • bell pepper: green and red
  • red onion
  • mayonnaise (Duke's)
  • garlic powder
  • cayenne pepper
  • black pepper
  • kosher salt
  • fritos

How To Make Frito Corn Salad

  1. Completely drain the whole kernel corn. Finely dice bell pepper + red onion.
  2. In a large bowl, combine whole kernel corn, bell pepper, red onion, cheese, and mayonnaise.
  3. Season, to taste, with garlic powder, cayenne pepper, black pepper, and kosher salt.
  4. Refrigerate for 1 hour. Remove and add crushed fritos. Stir + enjoy!

It doesn't get much simpler - or more delicious - than Frito Corn Salad. It's creamy, flavorful, crunchy -- and is sure to be the favorite dish of the cookout/potluck!

Ingredients

  

  • 2 cans whole kernel corn 15 oz each
  • 2 c. sharp cheddar cheese
  • 2 bell peppers one green + one red, chopped
  • ½ red onion diced
  • 1.25 c. Duke's Mayonnaise
  • garlic powder to taste
  • cayenne pepper to taste
  • black pepper to taste
  • kosher salt to taste
  • 1 bag fritos add until desired consistency

Instructions

 

  • Completely drain the whole kernel corn. Finely dice bell pepper + red onion.
  • In a large bowl, combine whole kernel corn, bell pepper, red onion, cheese, and mayonnaise.
  • Season, to taste, with garlic powder, cayenne pepper, black pepper, and kosher salt.
