Cranberry Pecan Chicken Salad

Hey, y'all! If there's a food that has been a tried and true favorite of mine throughout the years, it's chicken salad. While there are many varieties (and, to be honest, I love most all of 'em), I have two favorites: traditional southern chicken salad with grapes and Cranberry Pecan Chicken Salad. I'm so excited to share this recipe with y'all today!

  • rotisserie chicken
  • Duke's mayonnaise
  • pecans
  • Grey Poupon dijon mustard
  • celery
  • dried cranberries
  • green onions
  • kosher salt
  • black pepper
  • sugar
  • croissants

How to Make Cranberry Pecan Chicken Salad

  1. Remove meat from rotisserie chicken + dice into large pieces.
  2. Add all ingredients into a large bowl and mix until well-combined.
  3. Refrigerate until ready to serve; serve with croissants. Enjoy!

Ingredients

  

  • 1 rotisserie chicken white meat only
  • 1 c. Duke's mayonnaise more if needed/to taste
  • ½ c. pecans
  • 1 tbsp. Grey Poupon dijon mustard
  • 3 stalks celery diced
  • 5 oz. dried cranberries
  • 2 green onions chopped
  • 1 tsp. sugar
  • kosher salt to taste
  • black pepper to taste
  • croissants for serving

    This recipe is a great way to use up leftover chicken. The salad is full of flavor and the pecans add a nice crunch. I would definitely make this again.
