The yellow hue of curry stems from one of the main ingredients: turmeric.

For any variety of chicken salad, I recommend using Duke’s Mayonnaise.

I recommend using this within a 2-3 day time frame.

Ingredients, Shopping List: Curried Chicken Salad

Chicken: I recommend purchasing chicken breasts or chicken breast tenderloins for this recipe. If you are not going to make your own chicken, purchase a rotisserie chicken and use the white meat.

Mayonnaise: Use a high-quality mayo — I recommend Duke’s.

Produce: Red onion, celery, green onion, lime.

Raisins: Your brand of choice.

Nuts: Whole cashews — unsalted, if possible, to control the salt content.

Seasonings: Curry powder — I recommend Spice Islands.
