Curry is truly unique in its flavor. It's sweet and savory -- bold, earthy, and complex. The flavor profile stems from a mix of turmeric, cumin, ginger, and black pepper; many curry powders also feature cinnamon and garlic.
The yellow hue of curry stems from one of the main ingredients: turmeric.
For any variety of chicken salad, I recommend using Duke's Mayonnaise.
I recommend using this within a 2-3 day time frame.

Ingredients, Shopping List: Curried Chicken Salad
Chicken: I recommend purchasing chicken breasts or chicken breast tenderloins for this recipe. If you are not going to make your own chicken, purchase a rotisserie chicken and use the white meat.
Mayonnaise: Use a high-quality mayo -- I recommend Duke's.
Produce: Red onion, celery, green onion, lime.
Raisins: Your brand of choice.
Nuts: Whole cashews -- unsalted, if possible, to control the salt content.
Seasonings: Curry powder -- I recommend Spice Islands.

How To Make Curried Chicken Salad
- If preparing your own chicken, cook via your desired method: boiling, in the oven, or stovetop. Dice chicken once cooled.
- Add chicken to a large mixing bowl. To the bowl, add mayonnaise, red onion, celery, green onion, lime juice, raisins, and curry powder. Mix until well-incorporated and refrigerate.
- Prior to serving, stir in cashews. Enjoy!

- As curry is the main seasoning, purchase a good quality curry powder.
- If you do not want to make your own chicken, purchase a rotisserie and dice the white meat.

Ingredients

- 1.75 c. good mayonnaise such as Duke's
- 1.5 tbsp. curry powder more to taste
- 1 c. whole cashews
- 1 c. celery chopped
- 2 green onions chopped
- ¼ red onion diced
- .25 c. raisins
- ½ lime juiced
- kosher salt to taste
