Strawberry Streusel Bars

Hey, y'all! Your guests are going to love indulging in these irresistible Strawberry Streusel Bars, where buttery oat-almond crumble meets sweet strawberry jam and fresh fruit! This is the perfect sweet treat to serve company with coffee, as dessert, or as a part of your breakfast/brunch spread.

Ingredients: Strawberry Streusel Bars

  • 1.5 c. all-purpose flour
  • 1 c. instant oats
  • 1 c. sliced almonds
  • ¼ tsp. baking soda
  • ¾ c. unsalted butter, melted
  • ½ c. brown sugar, firmly packed
  • 1 tsp. kosher salt
  • 1 ¾ c. fresh strawberries, trimmed and chopped
  • 1.5 c. strawberry jam

How to Make Strawberry Streusel Bars

  1. Preheat oven to 350F
  2. Line an 8-inch square baking pan with parchment paper; spray with non-stick cooking spray.
  3. In a medium bowl, stir together flour, oats, almonds, and baking soda. Add melted butter, brown sugar, and salt, stirring until the mixture is crumbly.
  4. Press two-thirds of the mixture into the bottom of the prepared pan.
  5. Mix together the strawberry jam and fresh strawberries. Spread evenly over the crust. Sprinkle remaining crumble mixture on top.
  6. Bake until golden brown and bubbly, roughly 55 min – 1 hr. Let cool on a wire rack for 20 minutes.
  7. Refrigerate for 1 hour before slicing. Slice and enjoy!
