Just toss your chuck roast, seasonings, and beer into the slow cooker in the morning, and by dinnertime, you’ll have a pot full of tender, juicy beef that’s ready to be shredded and piled onto soft slider buns. The beer adds a rich depth of flavor that pairs perfectly with the provolone cheese and pickles.

  • 2-3 lb chuck roast
  • 8 oz. beer
  • 1 packet brown gravy mix
  • 1 packet dry onion soup mix
  • 1 onion, sliced
  • 8 slices provolone cheese
  • Sliced pickles for topping
  • 12-pack slider buns
  • Sprinkle of parsley, for garnishing

How to Make Slow Cooker Beer Beef Sliders

Once your beef is cooked and shredded, it’s just a matter of assembling the sliders. Layer on the cheese, beef, and pickles, and then top it all off with more cheese before adding the top half of the buns. For an extra melty finish, pop them under the broiler for a couple of minutes—just long enough for the cheese to get gooey and delicious.

  1. In an 8-quart slow cooker, add the chuck roast, beer, brown gravy mix, dry onion soup mix, and sliced onion. Stir everything together to combine. Cover and cook on low for 8 hours, stirring the liquid every few hours.
  2. Once the beef is tender, remove it from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir to coat it in the juices.
  3. Lay a sheet of parchment paper on your work surface and place the slider buns on it. Slice the buns open, setting the top halves aside.
  4. Place 4 slices of provolone cheese on the bottom halves of the buns. Add the shredded beef on top of the cheese, then place sliced pickles over the beef.
  5. Tear the remaining 2 slices of provolone cheese in half. Place the halves on top of the pickles, one on each side of the buns. Place the top halves of the buns on top of the cheese.
