In an 8-quart slow cooker, add the chuck roast, beer, brown gravy mix, dry onion soup mix, and sliced onion. Stir everything together to combine. Cover and cook on low for 8 hours, stirring the liquid every few hours.
Once the beef is tender, remove it from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir to coat it in the juices.
Lay a sheet of parchment paper on your work surface and place the slider buns on it. Slice the buns open, setting the top halves aside.
Place 4 slices of provolone cheese on the bottom halves of the buns. Add the shredded beef on top of the cheese, then place sliced pickles over the beef.
Tear the remaining 2 slices of provolone cheese in half. Place the halves on top of the pickles, one on each side of the buns. Place the top halves of the buns on top of the cheese.
(Optional) Preheat your broiler. Place the assembled sliders on a baking sheet and broil for 2-3 minutes, or until the cheese is slightly melted.
Sprinkle chopped parsley on top if desired. Serve and enjoy your delicious beer beef sliders!
Notes
The type of beer you use will affect the flavor of the beef. A darker beer will give a richer taste, while a lighter beer will keep the flavor more subtle.
For quick shredding, use two forks to pull the beef apart. You can also use a hand mixer on low speed for even faster results.
Don’t be afraid to use extra cheese if you like your sliders extra cheesy!
Keep a close eye on the sliders while they’re under the broiler to prevent burning. They should only take 2-3 minutes to get perfectly melted.
You can prepare the beef a day in advance and store it in the fridge. When you’re ready to serve, just reheat the beef in the slow cooker and assemble the sliders as usual.
