Hey, y’all! If there’s one side dish that always disappears fast, it’s a good pasta salad—and this Greek Pasta Salad never disappoints. Made with rotini pasta, feta cheese, olives, red onion, chickpeas, and pimientos, it’s full of Mediterranean-inspired flavor in every bite. Tossed in Greek dressing, this pasta salad comes together with little effort and tastes even better after a little time in the refrigerator.

This Greek Pasta Salad is filling enough for an easy lunch, but also works well alongside grilled chicken, burgers, sandwiches, or whatever is on the menu. It’s a simple dish that feels right at home at cookouts, potlucks, family dinners, or packed up for leftovers later in the week.

  • 16 oz. rotini pasta, cooked
  • 15 oz. chickpeas
  • 1 c. feta cheese crumbles
  • 1 c. red onion, diced
  • 1 c. kalamata olives
  • 4 oz. pimientos
  • 1 c. Greek dressing

  1. In a large bowl, combine pasta, chickpeas, feta cheese, red onion, olives, and pimientos.
  2. Pour dressing over the pasta mixture and mix until evenly coated. Chill in the refrigerator for at least an hour before serving.
