Hey, y'all! There's something about this salad -- it's light, healthy, though absolutely chock-full of flavor. While I especially love it in the summer, I can't help myself: I indulge in it year 'round! I'm excited to be sharing the recipe for my Healthy Cucumber Greek Salad, one of my all-time favorite side dishes, with y'all today. I know you will love it!

What type of cucumbers should I use for this recipe?

I like to use an English cucumber, as they are larger; if you use an American cucumber, use two good-sized ones. I typically remove the seeds from American cucumbers; however, I leave the skin on, as I enjoy the crunch/texture.

What type of tomatoes should I use?

You can use any tomato that you have on hand, though I think halved cherry tomatoes are best.

How long does this salad last in the refrigerator?

The liquid content will continue to rise as time passes; as such, I recommend consuming this Healthy Cucumber Greek Salad in 24 hours.

Ingredients, Shopping List: Healthy Cucumber Greek Salad

Fresh Produce: cherry tomatoes, cucumber (1 english or 2 American), red onion, green pepper, lemons.

Canned Goods: sliced black olives.

Dairy: crumbled feta cheese of choice.

Pantry Staples: extra virgin olive oil, red wine vinegar, honey.

Seasonings and Spices: basil, oregano, garlic powder, parsley, kosher salt.

How To Make Healthy Cucumber Greek Salad

  1. Slice cherry tomatoes in half and lay in a flat layer. Liberally salt and allow tomatoes to sit; the salt will help pull out the water content of the tomatoes.
  2. Dice the cucumber, red onion, and bell pepper. Add to a bowl, along with sliced black olives.
  3. In a separate bowl, whisk together lemon juice, extra virgin olive oil, red wine vinegar, honey, basil, oregano, garlic powder, and parsley. Pour dressing over chopped vegetables and stir until well-coated.
  4. Pat the top of the tomatoes with a paper towel; add tomatoes and feta to the salad. Fold. Enjoy!

  1. Use one English cucumber for this recipe or two American cucumbers. If using American, remove the seeds. I personally leave the skin on the cucumber for texture.
  2. Cut the tomatoes first and salt them. This will allow the salt time to pull out the moisture content of the tomatoes.
  3. Don't skimp on the dried herbs in the dressing -- they make all of the difference!
