- 16 oz. rotini pasta cooked
- 15 oz. chickpeas
- 1 c. feta cheese crumbles
- 1 c. red onion diced
- 1 c. kalamata olives
- 4 oz. pimientos
- 1 c. Greek dressing
In a large bowl, combine pasta, chickpeas, feta cheese, red onion, olives, and pimientos.
Pour dressing over the pasta mixture and mix until evenly coated. Chill in the refrigerator for at least an hour before serving.
- Chill before serving so the flavors have time to come together and the pasta can soak up the dressing.
- Chop ingredients into similar-sized pieces for the perfect bite every time.
- Use block feta and crumble it by hand for a richer flavor and creamier texture.
- Add grilled chicken, steak, or shrimp if you want to turn this pasta salad into a full meal.
- Swap the rotini for penne or bow tie pasta if that’s what you have on hand.
