Buffalo Chicken Baked Potatoes

Hey, y'all! You'll love this combination of two classic recipes: baked potatoes and buffalo chicken. My Buffalo Chicken Baked Potatoes make the perfect one-item meal, which is ideal for a busy weeknight dinner. This family favorite is filling, delicious, and very easy to make!

Ingredients: Buffalo Chicken Baked Potatoes

  • 4 medium russet potatoes, washed
  • 1 c. shredded chicken
  • 4 tbsp. butter, melted
  • 4 tbsp. buffalo sauce
  • 4 tbsp. green onion, chopped
  • 4 tbsp. blue cheese crumbles
  • ranch dressing, to taste
  • black pepper, to taste
  • kosher salt, to taste

How to Make Buffalo Chicken Baked Potatoes

  1. Preheat the oven to 400F.
  2. Using a fork, poke holes all over your washed potatoes.
  3. Place the potatoes on a standard baking sheet and baste them with melted butter. Sprinkle the outside of each potato with kosher salt and pepper. Bake for 55 minutes - 1 hour (or until fork tender).
  4. Split your potatoes and baste the inside with melted butter. Sprinkle the inside of the potatoes with kosher salt and black pepper.
  5. In a small bowl, mix together the shredded chicken and buffalo sauce. Place about ¼ cup of buffalo chicken into each potato.
  6. Drizzle with additional buffalo sauce, if desired - then drizzle with your desired amount of ranch.
  7. Top each potato with 1 tbsp. of blue cheese crumbles and 1 tbsp. of chopped green onions. Enjoy!
