Curried Chicken Salad

Hey, y'all! In true southern fashion, I love chicken salad; and while I love the traditional version, my Curried Chicken Salad is one of my all-time favorite recipes. It's savory, with just a hint of sweet, and finger lickin' good. I'm excited to share the recipe with y'all today!

Curried Chicken Salad Ingredients

  • 4 c. cooked chicken, diced
  • 1.75 c. good mayonnaise, such as Duke's
  • 1.5 tbsp. curry powder, more to taste
  • 1 c. whole cashews
  • 1 c. celery, chopped
  • 2 green onions, chopped
  • ¼ red onion, diced
  • .25 c. raisins
  • ½ lime, juiced
  • kosher salt, to taste

How to Make Curried Chicken Salad

  1. If preparing your own chicken, cook via your desired method: boiling, in the oven, or stovetop. Dice chicken once cooled.
  2. Add chicken to a large mixing bowl. To the bowl, add mayonnaise, red onion, celery, green onion, lime juice, raisins, and curry powder. Mix until well-incorporated and refrigerate.
  3. Prior to serving, stir in cashews. Enjoy!

  1. As curry is the main seasoning, purchase a good quality curry powder.
  2. If you do not want to make your own chicken, purchase a rotisserie and dice the white meat.
  3. Stir in the cashews right before serving. This will ensure that they stay crunchy, adding a wonderful texture to this dish.
