Cake Mix Strawberry Brownies

Hey, y'all! Did you know that you can make brownies from cake mix? It's easy, delicious, and diversifies the type of brownies that can come out of your oven. As such, I'm excited to introduce y'all to my Strawberry Brownies today. They come together in a snap + have the most delicious glaze. I know y'all are going to love them (and they are perfect for Valentine's Day)!

Can you make brownies from cake mix?

Absolutely! You will not, however, add the same ingredients that the back of the box will instruct. Follow the recipe and you will have brownies!

What's the main difference between brownies and cake?

Brownies are denser than cake and this recipe will teach you how to ensure that these strawberry brownies are dense and delicious!

What strawberry cake mix should be purchased for this recipe?

I purchased Pillsbury for these brownies, but off-brand cake mix will work just as well.

Ingredients, Shopping List: Strawberry Brownies

Dry Ingredients: Strawberry Cake Mix, Powdered Sugar

Wet Ingredients: Eggs, Canola Oil, Vanilla Extract, Milk (2%)

Pre-Made Goods: Strawberry Jam or Preserves (I recommend Bonne Maman)

How To Make Strawberry Brownies

  1. Preheat oven to 350F. Grease an 8 inch square baking pan with butter.
  2. Combine strawberry cake mix, eggs, canola oil, and vanilla extract in a large bowl. Mix until well-combined. Please note that the batter will be dense.
  3. Press the batter into the greased 8x8 pan. Pat it down tight, securing as low of a height as possible. Bake for roughly 16-20 minutes or until they have reached your desired level of doneness. Allow brownies to cool.
  4. In a small bowl, whisk together powdered sugar, strawberry jam, and milk. Whisk until fully-incorporated. Spread glaze over the cooled brownies. Slice with a knife or pizza cutter + enjoy!

Strawberry Brownies: Tips and Tricks

  1. You will want to press the brownie dough as tightly into your greased pan as possible. This will help the batter stay dense.
  2. Do not follow the instructions on the back of the cake mix; you will add a different amount of eggs/oil than you would for a traditional strawberry cake (and no water).
  3. To check the doneness of the brownies, insert a toothpick into the middle. If it comes out clean, they are done.
  4. Allow brownies to fully cool before glazing them; this will help maximize the glaze.
  5. To cut brownies, you can use a knife - however, I recommend a pizza cutter. So much easier!

Brownies

  • 1 box strawberry cake mix any brand
  • ⅓ c. canola oil
  • 2 eggs
  • 1 tbsp. vanilla extract

Glaze

  • 1 c. powdered sugar
  • 3 tbsp. strawberry jam I recommend Bonne Maman
  • 4 tbsp. milk 2%
