Hey, y'all! Growing up in the South meant one thing at the breakfast table: there'd be biscuits and gravy. While a simple dish, biscuits and gravy cannot be rivaled in deliciousness in my book. They are rich, filling, and comforting. They simply taste like home. I hope you all enjoy my Southern Sausage Gravy as much as I do!

Southern Sausage Gravy Ingredients
- 1 lb. ground pork breakfast sausage
- 1.5 tbsp. butter
- ⅓ c. flour
- 2.5 c. whole milk
- ½ tsp. salt
- 1 tsp. black pepper, more to taste
- Biscuits, for serving

How to Make Southern Sausage Gravy
- Cook the sausage in a large skillet over medium-high heat until it is no longer pink and fully browned. Do not drain the grease.
- If the sausage has a lot of grease, you can skip this step and omit the butter. That said, if the sausage does not produce a lot of grease, add the butter to the pan and stir until it has melted.
- Sprinkle the flour over the sausage and stir for 2 minutes.
- Slowly pour the milk into the sausage and flour mixture, whisking constantly until smooth. Cook until the gravy has started to thicken. If the gravy gets too thick, add more milk.
- Whisk in the seasonings. Taste the gravy and adjust the seasoning if needed.
- Serve over the top of your favorite biscuits.

Pro Tips For Making This Recipe
- If your sausage is lean and doesn’t produce much grease, don’t skip the butter. It’s essential for creating the roux (flour and fat mixture) that thickens the gravy.
- Add the milk slowly while whisking continuously to prevent lumps. This technique ensures a smooth, creamy gravy.
- For a little extra flavor, consider adding a pinch of cayenne pepper or a dash of hot sauce.

Frequently Asked Questions
What if my gravy is too thick?
If your gravy becomes too thick, simply add more milk a little at a time, whisking constantly until you reach your desired consistency.
What if I don’t have whole milk?
You can use other types of milk, such as 2% or skim. However, whole milk gives the gravy a richer and creamier texture.
What sides go well with sausage gravy and biscuits?
Popular sides include scrambled eggs, hash browns, or a simple fruit salad to balance the richness of the gravy.
