Ingredients
  

  • 1 lb. ground pork breakfast sausage
  • 1.5 tbsp. butter
  • c. flour
  • 2.5 c. whole milk
  • ½ tsp. salt
  • 1 tsp. black pepper more to taste
  • Biscuits for serving

Instructions
 

  • Cook the sausage in a large skillet over medium-high heat until it is no longer pink and fully browned. Do not drain the grease.
  • If the sausage has a lot of grease, you can skip this step and omit the butter. That said, if the sausage does not produce a lot of grease, add the butter to the pan and stir until it has melted.
  • Sprinkle the flour over the sausage and stir for 2 minutes.
  • Slowly pour the milk into the sausage and flour mixture, whisking constantly until smooth. Cook until the gravy has started to thicken. If the gravy gets too thick, add more milk.
  • Whisk in the seasonings. Taste the gravy and adjust the seasoning if needed.
  • Serve over the top of your favorite biscuits.

Notes

  • If your sausage is lean and doesn’t produce much grease, don’t skip the butter. It’s essential for creating the roux (flour and fat mixture) that thickens the gravy.
  • Add the milk slowly while whisking continuously to prevent lumps. This technique ensures a smooth, creamy gravy.
  • For a little extra flavor, consider adding a pinch of cayenne pepper or a dash of hot sauce.
