- 2 20oz. cans of pineapple chunks, drained (reserve 6 tbsp. of pineapple juice)
- 6 tbsp. flour
- ½ c. sugar
- 1 c. shredded cheddar cheese
- 1.5 sleeves of ritz crackers, crushed
- ¾ stick of butter, melted (more for greasing)

How to Make Southern Pineapple Casserole
- Preheat oven to 350F.
- Grease a medium-sized casserole dish with butter.
- In a bowl, mix together the flour, sugar, and reserved pineapple juice. Once combined, add the drained pineapple and stir until coated.
- Crush the ritz crackers and melt butter. Coat cracker crumbs in butter. Add the pineapple, flour, and sugar mixture into the greased casserole dish. Top with shredded cheddar cheese, followed by buttered cracker crumbs.
- Bake for 25 minutes or until brown and bubbly.
