Southern Pineapple Casserole

Hey, y'all! Today I am introducing you to one of the most controversial southern recipes: Southern Pineapple Casserole. It's one of those dishes that appears weird after reading the recipe, but this I promise you: it's so delicious and always a crowd favorite. I hope y'all love it as much as I do!

Southern Pineapple Casserole Ingredients

  • 2 20oz. cans of pineapple chunks, drained (reserve 6 tbsp. of pineapple juice)
  • 6 tbsp. flour
  • ½ c. sugar
  • 1 c. shredded cheddar cheese
  • 1.5 sleeves of ritz crackers, crushed
  • ¾ stick of butter, melted (more for greasing)

How to Make Southern Pineapple Casserole

  1. Preheat oven to 350F.
  2. Grease a medium-sized casserole dish with butter.
  3. In a bowl, mix together the flour, sugar, and reserved pineapple juice. Once combined, add the drained pineapple and stir until coated.
  4. Crush the ritz crackers and melt butter. Coat cracker crumbs in butter. Add the pineapple, flour, and sugar mixture into the greased casserole dish. Top with shredded cheddar cheese, followed by buttered cracker crumbs.
  5. Bake for 25 minutes or until brown and bubbly.

Pro Tips for Making Southern Pineapple Casserole

  1. Be sure to drain the pineapple juice; if used, the middle of the casserole would be too runny. Do reserve 6 tbsp., though.
  2. You can use pineapple chunks or crushed for this recipe; the difference is purely the texture you desire. Be sure to drain either choice of its juice!
