Hey, y'all! Admittedly, I do not make many desserts -- but, when I do, I prefer them to be fruit-forward. Blueberries are one of my favorite foods - thus, I set off to the kitchen to design the most delicious, easy-to-make no bake blueberry pie for y'all. I hope you love it as much as I do!

No Bake Blueberry Pie
This recipe yields one pie, though the recipe can easily be doubled. I also utilize a pre-made graham cracker crust, though if you prefer, you can make your own. Needless to say: this recipe is as easy as it gets!

Shopping List: No Bake Blueberry Pie
- fresh blueberries
- sugar
- corn starch
- vanilla extract
- pre-made graham cracker crust
- lemon juice
- kosher salt


How to Make No Bake Blueberry Pie
- In a medium-size saucepan, combine sugar, vanilla, corn starch, lemon juice, and kosher salt. Whisk in water and mix until fully combined and no lumps exist.
- Add in one half of the blueberries over medium-high heat. Bring to boil. Let the mixture cook until thickened, roughly 3-5 minutes.
- Once thickened, remove from heat and allow the mixture to fully cool.
- Fold in the remaining fresh blueberries and pour into the graham cracker crust. Refrigerate for 1-3 hours or until fully set.

Hey there. I am making this recipe now but I'm confused about some of the ingredients. Is it really 7/8 cup of sugar and a tablespoon of vanilla? Should that be a teaspoon? Thanks!

Hi, Melissa! You can absolutely add less vanilla if you'd prefer; that said, I find that a heavy hand here (tbsp) really makes the pie delicious!
