No Bake Blueberry Pie

Hey, y'all! Admittedly, I do not make many desserts -- but, when I do, I prefer them to be fruit-forward. Blueberries are one of my favorite foods - thus, I set off to the kitchen to design the most delicious, easy-to-make no bake blueberry pie for y'all. I hope you love it as much as I do!

This recipe yields one pie, though the recipe can easily be doubled. I also utilize a pre-made graham cracker crust, though if you prefer, you can make your own. Needless to say: this recipe is as easy as it gets!

  • fresh blueberries
  • sugar
  • corn starch
  • vanilla extract
  • pre-made graham cracker crust
  • lemon juice
  • kosher salt

How to Make No Bake Blueberry Pie

  1. In a medium-size saucepan, combine sugar, vanilla, corn starch, lemon juice, and kosher salt. Whisk in water and mix until fully combined and no lumps exist.
  2. Add in one half of the blueberries over medium-high heat. Bring to boil. Let the mixture cook until thickened, roughly 3-5 minutes.
  3. Once thickened, remove from heat and allow the mixture to fully cool.
  4. Fold in the remaining fresh blueberries and pour into the graham cracker crust. Refrigerate for 1-3 hours or until fully set.

  • 3.5 tbsp. corn starch
  • ¼ c. water
  • 1 tbsp. vanilla extract
  • 1 pre-made graham cracker crust
  • 1 tbsp. lemon juice

    Hey there. I am making this recipe now but I'm confused about some of the ingredients. Is it really 7/8 cup of sugar and a tablespoon of vanilla? Should that be a teaspoon? Thanks!

      Hi, Melissa! You can absolutely add less vanilla if you'd prefer; that said, I find that a heavy hand here (tbsp) really makes the pie delicious!

    This is a very good fresh blueberry pie recipe. I like how it uses blueberries to make the sauce for the filling. The next time I make this I will make a few adjustments for our taste preferences. First, I will decrease the amount of vanilla by half. I want blueberries to be the strongest flavor in the pie. Second, I will increase the amount of blueberries (almost double it to 6 cups), but there is no need to increase the amount of sugar, as fresh, local blueberries are already so sweet. In fact, I might even decrease the sugar to 3/4 cup and see how sweet it is.
