Ingredients: Lemon Lime Meltaway Cookies

For the cookies:

  • 1 ½ c. butter, softened
  • 1 ½ c. powdered sugar
  • Zest of 1 lemon
  • Zest of 1 lime
  • 3 c. flour
  • yellow and green food coloring

For the icing:

  • 1 cup powdered sugar, divided
  • juice of one lemon
  • juice of one lime

How to Make Lemon Lime Meltaway Cookies

  1. Preheat oven to 400°F.
  2. Beat softened butter and 1½ cups powdered sugar in a large bowl until fluffy, then mix in the flour.
  3. Divide dough into two bowls, adding yellow food coloring and lemon zest to one, and green food coloring and lime zest to the other; mix each until incorporated.
  4. Roll 2 teaspoons of dough into balls, flatten, and place on parchment-lined baking sheets.
  5. Bake for 6-8 minutes, until edges are just set, then cool completely.
  6. In two small bowls, mix ½ cup powdered sugar each with the juice of one lemon and one lime to form a thick glaze.
  7. Spoon glaze onto the center of each cookie, garnish with zest if desired, and let icing harden for an hour.
  8. Serve and enjoy!
