Hey, y’all! If the classic sloppy joe has lost a little of its spark for you, let me introduce a fun upgrade: my Sloppy Joe Enchilada Sliders. They’re loaded with bold Tex-Mex flavor, plenty of melty cheese, and just enough heat to keep things interesting. These little sliders disappear fast — folks will be asking for seconds before you’ve even made it to the table!

Sloppy Joe Enchilada Sliders Ingredients

  • 1 lb. ground beef
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tsp. cumin
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • ⅓ c. oatmeal
  • 1 (10 oz.) can red enchilada sauce
  • 1 tbsp. brown sugar
  • 8 slices pepper jack cheese
  • 12 slider buns
  • Scallions for topping
  • Paprika (optional)

How to Make Sloppy Joe Enchilada Sliders

  1. In a large skillet, toss in the ground beef, diced peppers, onions, and seasonings. Cook over medium-high heat until the beef is browned, about 7–10 minutes. Drain off the grease.
  2. Stir in the oatmeal (yes, oatmeal, it helps thicken things up!), enchilada sauce, and brown sugar. Let it come to a boil, then simmer on low for 15 minutes, stirring now and then.
  3. Preheat your oven to 375°F. Line a baking sheet with parchment paper and place the slider buns on it. Slice the whole sheet of buns in half and set the tops aside.
  4. Spoon the beef mixture over the bottom buns, then layer on 6 slices of pepper jack cheese. Put the tops of the buns back on.
  5. Cut the remaining 2 slices of pepper jack into little strands to make “shredded cheese” (or just use shredded cheese, no judgment here). Sprinkle it over the tops of the buns along with chopped scallions. Add a dash of paprika if you’re feeling spicy.
  6. Bake for about 3 minutes, just until the cheese is melted. Slice them up and serve hot!

  1. Frozen diced peppers and onions save time and cleanup. You can grab a bag from the freezer aisle!
  2. Want it hotter? Use a spicy enchilada sauce or toss in a pinch of cayenne.

  4. Oatmeal in sloppy joes? Yep! It thickens the mix and adds a little texture.
