- 1 (10 oz.) can red enchilada sauce
- 1 tbsp. brown sugar
- 8 slices pepper jack cheese
- 12 slider buns
- Scallions for topping
- Paprika (optional)

How to Make Sloppy Joe Enchilada Sliders
- In a large skillet, toss in the ground beef, diced peppers, onions, and seasonings. Cook over medium-high heat until the beef is browned, about 7–10 minutes. Drain off the grease.
