Ingredients

  • 4 boneless, skinless chicken breasts
  • ¼ c. red wine vinegar
  • ¼ c. reduced sodium soy sauce
  • ¼ c. olive oil
  • 1 ½ tsp. dried parsley
  • ½ tsp. dried oregano
  • ¼ tsp. garlic powder
  • ¼ tsp. black pepper

Instructions

  • In a gallon-size zip-top bag, combine vinegar, soy sauce, olive oil, and seasonings. Seal and shake to mix.
  • Add the chicken to the bag, seal it up, and turn it a few times to coat.
  • Refrigerate for at least 2 hours or overnight. Flip the bag occasionally to keep things even.
  • When ready to grill, heat your grill to medium (about 350°F). Rub the grates with vegetable oil to keep the chicken from sticking.
  • Place chicken on the grill, cover, and cook for 5 minutes.
  • Flip the chicken, uncover the grill, and cook another 4–5 minutes or until the internal temp hits 165°F.
  • Remove from grill and let rest for 5 minutes before serving.

Notes

  • Let the chicken rest for 5 minutes before slicing.
  • Cook to 165°F for juicy, perfectly cooked chicken.
  • This marinade also works well with chicken thighs.
  • No extra salt is needed since the soy sauce adds plenty.
