Ingredients
  

  • 1 lb. breakfast sausage
  • 8 oz. cream cheese
  • 10 oz. Rotel drained onto paper towels to remove the moisture
  • 1.5 c. Bisquick
  • 2 c. shredded cheese

Instructions
 

  • Preheat your oven to 375 degrees Fahrenheit. Line a baking sheet with parchment and set aside.
  • In a large mixing bowl, mix the sausage, cream cheese, Rotel, Bisquick, and shredded cheese until well combined.
  • Use a 1.5-inch cookie scoop to scoop out the mixture and gently roll it into a ball.
  • Place them 2 inches apart on the parchment-lined baking sheet.
  • Bake for 10-12 minutes and use a thermometer to check that the largest one is 165 degrees internally.

Notes

  • Drain the Rotel well to prevent excess moisture from making the mixture too soft.
  • Use a cookie scoop to keep the sausage balls uniform so they bake evenly.
  • Check the temperature and make sure the largest sausage ball reaches 165 degrees internally.
  • Mix thoroughly, as softened cream cheese blends much more easily.
  • Leave space on the pan to help the sausage balls brown nicely.
