It doesn't get more economical - or classically southern - than my Old Fashioned Macaroni and Tomatoes. Simple and delicious!

Ingredients
  

  • 3 c. macaroni noodles uncooked
  • 1 can stewed tomatoes 14.5 oz.
  • 1 can petite diced tomatoes 28 oz.
  • 3 tbsp. butter melted
  • 1 tsp. sugar
  • Tony Chachere's to taste
  • Kosher Salt to taste
  • Black Pepper to taste
  • Onion Powder to taste
  • Garlic Powder to taste

Instructions
 

  • Fill a large pot with water and kosher salt, allowing it to come to a boil. Cook macaroni noodles according to the instructions on the box; cook until al dente and drain well.
  • Add macaroni back to the pot over medium heat. Add melted butter and Tony Chachere's, stirring until the noodles are fully coated. Add stewed tomatoes, petite diced tomatoes, and sugar. Stir.
  • Season to taste with kosher salt, black pepper, onion powder, garlic powder, and additional Tony Chachere's. Stir in seasonings, reduce heat to low, and cook for 5 minutes. Remove from heat and enjoy!

Notes

  1. Adding sugar to this recipe seems odd, but is necessary - it won't make the macaroni and tomatoes sweet, but it will cut the acidity of the tomatoes.
  2. If you do not have Tony Chachere's, any cajun/creole seasoning will work.
