In a medium bowl, whisk together the eggs and milk until well combined. Sift in the flour and sugar, then whisk until the batter is smooth and lump-free.
Heat a lightly greased skillet over medium heat. Pour about ¼ cup of batter into the center of the pan, then immediately swirl the pan to spread the batter into a thin, even circle.
Cook for about 30 seconds, or until the edges begin to lift. Carefully flip and cook for another 30 seconds.
Transfer to a plate and repeat with the remaining batter. Serve warm with your favorite sweet or savory fillings.

Let the batter rest for at least 30 minutes, or up to 12 hours, for the smoothest crepes.
A nonstick skillet or crepe pan makes flipping easier.
