Ingredients
  

  • 3 eggs
  • 1 c. milk
  • 1 c. flour
  • 1 tbsp. sugar

Instructions
 

  • In a medium bowl, whisk together the eggs and milk until well combined. Sift in the flour and sugar, then whisk until the batter is smooth and lump-free.
  • Heat a lightly greased skillet over medium heat. Pour about ¼ cup of batter into the center of the pan, then immediately swirl the pan to spread the batter into a thin, even circle.
  • Cook for about 30 seconds, or until the edges begin to lift. Carefully flip and cook for another 30 seconds.
  • Transfer to a plate and repeat with the remaining batter. Serve warm with your favorite sweet or savory fillings.

Notes

  • Let the batter rest for at least 30 minutes, or up to 12 hours, for the smoothest crepes.
  • A nonstick skillet or crepe pan makes flipping easier.
  • Lightly grease the pan to prevent sticking without over-browning.
  • Swirl the batter immediately for a thin, even crepe.
  • Keep finished crepes covered with a clean kitchen towel until ready to serve.
