Pizza Stuffed Peppers

These Pizza Stuffed Peppers are not only delicious but also super versatile. You can mix and match your favorite pizza toppings to make them just the way you like. Ingredients: Pizza Stuffed Peppers

  • 1 lb. ground Italian sausage
  • 3 cloves garlic, minced
  • 1 (14 oz.) can diced tomatoes with juice
  • 1 (23 oz.) jar marinara sauce
  • 3 large bell peppers, any color
  • 2 c. shredded mozzarella cheese
  • black pitted olives, sliced, for topping
  • spinach, for topping
  • mini pepperoni, for topping
  • ½ tsp. salt
  • ½ tsp. pepper
  • Italian seasoning, to taste

How to Make Pizza Stuffed Peppers

  1. Preheat the oven to 400°F.
  2. In a large skillet over medium heat, cook the sausage, garlic, salt, pepper, and Italian seasoning, stirring until the sausage is browned and no longer pink. (If the garlic starts to burn, add a little vegetable oil.)
  3. Drain any grease, then add the diced tomatoes with juice. Reserve 1 cup of marinara sauce in a bowl and set aside. Pour the remaining marinara into the skillet, stir, and let simmer for 8 minutes. Spread the reserved marinara evenly across the bottom of a 9x13 baking dish.
  4. Slice the bell peppers in half, remove the seeds, and place them on top of the sauce in the baking dish. Turn off the heat, then spoon the meat mixture into the peppers. Top with mozzarella cheese, pepperoni, and any additional toppings you like.
  5. Bake for 25-30 minutes, or until the peppers are soft and the cheese is melted. Serve and enjoy!
