Hey, y'all. If there's something that we like here in the south, it's pimento cheese. I try to use it in any way possible (try my tomato pie and pimento cheese pasta salad to name a few). As I was thinking of new ways to repurpose the caviar of the south, I thought: "Why not put it in a hand pie?" From there, these pimento cheese hand pies were born. They are simply divine and oh-so-easy to make!

Pimento Cheese Hand Pies
Ingredients: Pimento Cheese Hand Pies
- 1.5 c. shredded cheddar cheese
- 4 oz pimentos, drained
- 3 tbsp. Duke's mayonnaise
- 2 oz. cream cheese
- garlic powder, to taste
- onion powder, to taste
- black pepper, to taste
- hot sauce, to taste
- refrigerated pie crust (pre-made)
- 1 egg

Directions: How to Make Pimento Cheese Hand Pies
- Mix together cheddar cheese, pimentos, mayonnaise, cream cheese, garlic powder, onion powder, black pepper, and hot sauce. Mix until well-combined.
- Spread flour onto a surface and roll out refrigerated pie crust. Using a circle cutter (3-4 inches), cut out even circles from the pie crust. Roll out excess dough to make more hand pies.
- Whisk together 1 egg and 1 tbsp. of water. This will be the egg wash.
- Spoon 1.5-2 tbsp. of pimento cheese into each pie circle. Brush egg wash around each circle. Bring one half of the circle over top of the other, sealing in the pimento cheese. Be sure to release any air that might be caught in the hand pies. Using a fork, crimp the edges to seal in the mixture. Brush the front and back of each hand pie with egg wash.
- Place hand pies in the air fryer at 375F for 12-14 minutes or until the dough is browned. Serve warm and enjoy! If you do not have an air fryer, you can bake these in the oven at the same temperature for the same amount of time.

Yes, I always use refrigerated pie crust (pre-made). If you did not want to make the pimento cheese, you could use your favorite store-bought brand. That would make this recipe 100% assembly!

For this recipe, I used my air fryer. That said, if you don't have an air fryer, you can use your traditional oven. They bake in roughly the same amount of time at the same temperature. Simply watch for the crust to brown!

I love pimento cheese, but never thought of making pimento cheese hand pies! These are so easy to make using refrigerated dough which I always have in my freezer. We don't have Dukes Mayo here, but Best Foods is my favorite so it is what I used. I will make these again for my Dad when he comes home from the hospital. He and I love to eat pimento cheese and crackers together.
