Easy Blueberry Pancakes

Hey, y'all! A special brunch or breakfast at home is much easier to prepare than you'd think! Save on that brunch bill and make my Easy Blueberry Pancakes at home. Y'all will love them!

Ingredients: Easy Blueberry Pancakes

  • 1 c. flour
  • 1 c. fresh blueberries
  • 1 ¼ c. buttermilk
  • 1 egg
  • 2 tbsp. sugar
  • 2 tbsp. melted butter
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. vanilla extract
  • ½ tsp. salt
  • butter, for serving and cooking
  • maple syrup, for serving

How to Make Easy Blueberry Pancakes

  1. Whisk together the dry ingredients in a bowl (flour, sugar, baking powder, baking soda, salt). In a separate bowl, whisk the egg, buttermilk, vanilla, and melted butter. Add into the dry ingredients and whisk until just combined. Avoid over-mixing the batter.
  2. Heat a nonstick pan over medium heat and melt some butter.
  3. Pour even amounts of batter into the hot skillet and spread it flat.
  4. Arrange a few blueberries on top. Cook until you see bubbles on top and the edges firm up. Flip and cook for another 1-2 minutes until pancakes are fluffy and cooked through.
  5. Serve with butter and maple syrup. Enjoy!
