No-Bake Peanut Butter Pie Recipe

Hey, y'all! Every good meal needs a dessert -- but, after working in the kitchen for hours preparing dinner, you likely don't want to labor over the final course. That's where no-bake desserts come in handy and I'm excited to be sharing one of my all-time favorites with you today: my No-Bake Peanut Butter Pie. This is a recipe that I grew up eating and I hope y'all will enjoy making it for your loved ones in the years to come!

Do I need to make a homemade graham cracker crust?

Absolutely not. I do think that homemade graham cracker crust is fabulous (simply combine crushed graham crackers + melted butter); however, I almost always purchase a pre-made graham cracker crust. They are inexpensive - usually around $2 at your local grocery store - and absolutely delicious. Look for one that isn't cracked/crumbled, as that is common.

Can I make this dessert lighter/healthier?

While few desserts are "healthy" in the pie realm, you can certainly make a lighter version of this. You can use low-fat or fat-free cream cheese; less sugar; and fat-free frozen whipped topping.

I prefer other nut butters to peanut butter. Can I substitute?

100%! Use the nut butter of your choice. The ingredient quantity will remain the same.

How long do I need to refrigerate the pie?

I would chill this pie for at minimum one hour prior to serving. That said, you can also place it in the freezer until firm for a quicker fix!

Ingredients, Shopping List No-Bake Peanut Butter Pie:

  • Pre-made graham cracker crust: this recipe yields enough filling for a 9-inch, already-prepared graham cracker crust. They are readily available at your local grocery.
  • Cream cheese: 1 block (8 oz). I prefer to use full-fat for this recipe, but you can use low-fat or non-fat.
  • Powdered/Confectioners' Sugar: 1.25 c. will be utilized in this recipe.
  • Frozen Whipped Topping: One 8 ounce container -- off-brand or Cool Whip.
  • Peanut Butter: 1 cup. of your choice of peanut butter. Creamy works best.
  • Vanilla Extract: Use good vanilla extract -- it makes all of the difference.
  • Whipped Cream: for garnish/serving. The more, the merrier by my standard!

Ingredients

  

  • 1 pre-made graham cracker crust 9 inch
  • 1 c. creamy peanut butter
  • 1.25 c. powdered sugar
  • 8 oz. cream cheese
  • 8 oz. frozen whipped topping
  • 1 tbsp. vanilla extract
  • whipped cream for serving

Instructions

 

  • In a stand mixer, mix the peanut butter, cream cheese, and vanilla extract until well-combined and smooth.
  • To the mixture, add in the powdered sugar. Mix until well-combined.
  • Finally, add the frozen whipped topping and mix until smooth + incorporated.
  • Pour filling into graham cracker crust; refrigerate, at minimum, for an hour prior to serving. Freeze, if desired, until fully set -- which is quicker.
  • Top with whipped cream + serve!
