Ingredients
  

  • 16 oz. box of jumbo shells
  • 1 lb. ground beef
  • 1.25 oz. taco seasoning
  • 16 oz. jar of thick and chunky salsa
  • 1 c. sour cream
  • 1.5 c. Mexican-style shredded cheese
  • Green onion, diced tomatoes, sour cream for topping

Instructions
 

  • Cook jumbo shells according to package instructions, then set them aside.
  • In a large skillet over medium-high heat, brown the ground beef. Stir in Taco Seasoning until thoroughly combined.
  • Add salsa, sour cream, and half of the Mexican-style cheese, mixing well.
  • Preheat oven to 350F and grease a 9x13-inch baking dish with cooking spray.
  • Stuff the cooked shells with the beef mixture and arrange them in the baking dish.
  • Sprinkle the remaining cheese over the stuffed shells.
  • Bake for 15 minutes, or until the cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes

  • Cook the jumbo shells just until they are al dente to prevent them from becoming too soft during baking.
  • Allow the baked shells to rest for a few minutes before serving to set and make them easier to handle.
  • For a richer filling, mix a small amount of cream cheese into the beef mixture along with the sour cream.
