- 1 lb. lean ground beef
- 1 oz. taco seasoning
- ⅔ c. salsa
- 10 oz. can red enchilada sauce
- 2 c. shredded cheddar cheese
- ½ c. thinly sliced green onions plus more for garnish
- 1 can large biscuits
- taco toppings like lettuce, tomato, salsa, sour cream for garnish, optional
Preheat oven to 375°F. Spray a 9x13 baking dish with non-stick spray.
In a large pan, brown the ground beef and drain off any grease.
Add salsa, enchilada sauce, and taco seasoning to the beef. Stir to combine.
Mix in half of the cheese and scallions.
Cut each biscuit into 8 pieces and gently fold them into the beef mixture.
Pour the mixture into the prepared baking dish.
Bake for 20 minutes, then remove from the oven and sprinkle the remaining cheese on top.
Bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Remove from the oven and serve immediately, garnished with extra scallions and your favorite taco toppings. Enjoy!
- Make sure to drain the majority of the grease from the ground beef to prevent the casserole from becoming too oily.
