118 oz. box of family-sized brownie mix (plus eggs, oil, and water or whatever the box calls for)
7oz.container of marshmallow fluff
16oz.can of vanilla frosting
7oz.bag of shredded coconut
8drops of pink food coloring
Instructions
Line a 9x13 baking dish with parchment paper. Prepare the brownie mix according to the box and bake it up. Let it cool completely (about an hour).
In a medium bowl, mix together the marshmallow fluff and vanilla frosting until it’s smooth and creamy. You can microwave the fluff for 10–15 seconds to make it easier to scoop.
Spread that marshmallow frosting over the cooled brownies.
In another bowl, add the shredded coconut and a few drops of pink food coloring. Stir until it’s all coated. You can add more dye if needed to get that perfect Snoball pink.
Sprinkle the coconut over the frosted brownies and gently press it down so it sticks.
Use the parchment paper to lift the brownies out of the pan. Slice them up and serve!
Notes
Don’t skip the parchment paper, it makes slicing and serving a breeze.
Microwave the fluff for a few seconds to make mixing easier.
Let the brownies cool completely before frosting or you’ll have a melty mess.
Store leftovers in an airtight container in the fridge for 3–4 days (if they last that long).
