Ingredients
  

  • 2 Minute Jasmine Rice & Red Quinoa Cups
  • 1 c. cooked chicken diced
  • 1 ¼ c. mayonnaise adding more if desired
  • ½ c. dried cranberries
  • ½ c. shredded carrots
  • 20 oz. pineapple tidbits drained
  • ½ tsp. curry powder
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ¼ tsp. kosher salt
  • ¼ tsp. black pepper
  • lettuce for serving

Instructions
 

  • Place Minute Jasmine Rice & Red Quinoa Cups into the microwave for 60 seconds each. Add them to a bowl. Add diced chicken, mayonnaise, dried cranberries, shredded carrots, drained pineapple tidbits, curry powder, garlic powder, onion powder, kosher salt, and black pepper. Mix until fully combined. Add more mayonnaise for consistency, if desired, and season additionally to taste.
  • Serve over a bed of romaine lettuce. Enjoy!
