Ingredients
  

  • 16 oz. sharp cheddar cheese grated
  • ½ c. beer a light lager or ale works well
  • 2 cloves garlic minced
  • 1 tsp. Worcestershire sauce
  • ½ tsp. Dijon mustard
  • ½ tsp. hot sauce adjust to taste
  • ¼ tsp. paprika
  • ¼ tsp. salt adjust to taste
  • ¼ tsp. black pepper

Instructions
 

  • Grate the cheddar cheese and set it aside. Ensure the cheese is at room temperature for easier blending.
  • In a food processor, combine the grated cheddar cheese, garlic, Worcestershire sauce, Dijon mustard, hot sauce, paprika, salt, and black pepper.
  • Pulse the mixture until the ingredients are well combined and the cheese is finely ground.
  • With the food processor running, slowly pour in the beer. Continue blending until the mixture is smooth and creamy.
  • Taste the beer cheese and adjust the seasoning as needed, adding more salt, pepper, or hot sauce to suit your taste.
  • Transfer the beer cheese to a serving dish and cover. Refrigerate for at least 1 hour to allow the flavors to meld.
  • Serve the beer cheese chilled or at room temperature with crackers, pretzels, celery sticks, or other dipping options.

Notes

  • Let that cheddar sit out a bit before blending. It’ll mix smoother and creamier.
  • Beer Matters: A light lager or ale works best. Don’t go too dark or bitter unless you like a strong beer flavor.
  • Want it spicier? Add a dash more of hot sauce or even a pinch of cayenne.
  • Don’t skip the chill time. The flavors need a little time to get acquainted.
  • Serving Ideas: Crackers, pretzels, celery sticks, or even warm soft pretzels. This dip doesn’t discriminate!
