Equipment

  • blender

Ingredients

  • 2 c. ice
  • ½ c. tequila
  • 15 oz. can cream of coconut
  • ¼ c. triple sec
  • ¼ c. lime juice
  • 1 lime zested

Optional Garnishes

  • Crystalized sprinkles
  • Toasted coconut
  • Lime slices
  • Sugar

Instructions

  • In a blender, combine the ice, cream of coconut, tequila, triple sec, lime juice, and lime zest. Blend until smooth. If the mixture is too thick, add more ice and blend again.
  • Taste the mixture and adjust the tequila amount if desired.
  • If you’d like to garnish your glass, first dip the rim of the glass in triple sec, then dip it in crystalized sprinkles. Add toppings like toasted coconut and lime slices for extra flavor and presentation.
  • To toast the coconut, add a handful to a small frying pan. Cook over medium heat, stirring often, as it will toast quickly. Remove from heat when the coconut reaches a light brown color.

Notes

  • Before making your drink, pop your glasses in the freezer for a few minutes. This will keep your drink cold longer and give it a frosty appearance.
  • If you prefer your drink a bit sweeter, add a splash of simple syrup to the blender. Start with a small amount and adjust to taste.
  • Keep a close eye on the coconut while toasting. It can go from golden brown to burnt very quickly. Stir constantly and remove from heat as soon as it reaches the desired color.
