Equipment

  • convection oven

Ingredients

  • 2 lbs. chicken wings
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. paprika
  • ½ tsp. cayenne pepper optional for extra heat
  • Your favorite wing sauce for serving optional

Instructions

  • Preheat your convection oven to 400°F. Place a wire rack on a baking sheet and set it aside.
  • In a large bowl, toss the chicken wings with olive oil until evenly coated.
  • In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using).
  • Sprinkle the spice mixture over the chicken wings and toss until they are evenly coated.
  • Place the seasoned chicken wings on a baking sheet lined with parchment paper, ensuring they are in a single layer and not touching.
  • Bake in the preheated convection oven for 35-40 minutes, or until the wings are golden brown and crispy, flipping them halfway through cooking.
  • Once cooked, remove the wings from the oven and let them rest for a few minutes before serving.
  • Serve hot with your favorite wing sauce for dipping, if desired.

Notes

  • Before tossing the wings in oil, make sure they’re thoroughly patted dry with paper towels. This helps them get extra crispy in the oven.
  • Cooking the wings on a wire rack allows the heat to circulate around the wings, ensuring they cook evenly and get crispy all over.
  • Make sure the wings are in a single layer and not touching each other on the baking sheet. Overcrowding can cause them to steam rather than bake, leading to less crispy wings.
  • Let the wings rest for a few minutes after baking to allow the juices to redistribute, making them even more flavorful and juicy.
