Ingredients
  

  • 1 lb. ground chicken
  • 1 egg
  • ½ c. seasoned breadcrumbs
  • 2 tsp. Italian seasoning
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 24 oz. marinara sauce
  • 4 oz. fresh mozzarella sliced

Instructions
 

  • Preheat the oven to 400°F.
  • In a large bowl, combine the ground chicken, egg, breadcrumbs, half of the Italian seasoning, salt, and pepper. Mix until just combined, then roll into 1–2-inch meatballs and arrange them in a baking dish.
  • Pour the marinara sauce evenly over the meatballs. Cover the dish with foil and bake for 30 minutes.
  • Top each meatball with a slice of fresh mozzarella and return to the oven, uncovered, for about 5 minutes, or until the cheese is melted.
  • Serve over your favorite pasta with the remaining Italian seasoning, if desired.

Notes

  • Fresh mozzarella melts beautifully and adds rich flavor.
  • Roll the meatballs the same size so they cook evenly.
  • Cover the baking dish to keep the meatballs tender and juicy.
  • Broil for 1–2 minutes for a bubbly, golden cheese topping.
  • Serve over pasta, in hoagie rolls, or on their own as an appetizer.
