Ingredients
  

  • 1 box red velvet cake mix
  • 2 eggs
  • ½ c. vegetable oil
  • 1 c. white chocolate chips

Instructions
 

  • Preheat your oven to 350F.
  • Line a cookie sheet with parchment paper, and set aside.
  • In a large mixing bowl, combine cake mix, eggs, and vegetable oil. The dough will become thick. Continue folding the mixture with a cake spatula, until all dry cake mix spots are gone. Fold in the white chocolate chips.
  • Using a medium cookie scoop, scoop cookies onto parchment paper, 2-3 inches apart.
  • Bake for 10 minutes. Allow the cookies to cool before removing from the pan.
  • Enjoy!

Notes

  • Ensure your eggs are at room temperature before mixing them with the other ingredients. This helps create a smoother batter and promotes even baking.
  • Keep an eye on the cookies as they bake. They should be set and slightly firm around the edges but still soft in the center when done. Overbaking can result in dry cookies.
