Ingredients
  

  • 16 oz. cheese tortellini
  • 1 lb. ground beef
  • 1 oz. packet taco seasoning
  • 1 c. water
  • 2 c. enchilada sauce
  • 15 oz. can black beans drained and rinsed
  • 1 ½ c. canned corn
  • 2 c. shredded pepper jack cheese
  • sour cream for topping
  • chopped scallions for topping optional

Instructions
 

  • Cook the tortellini according to the package directions. Drain and set aside.
  • Meanwhile, brown the ground beef in a large skillet over medium heat. Drain any excess grease, then stir in the taco seasoning, water, enchilada sauce, black beans, and corn until well combined.
  • Add the cooked tortellini and gently stir to coat everything in the sauce.
  • Sprinkle the shredded cheese evenly over the top. If using an oven-safe skillet, broil for about 3 minutes, or until the cheese is melted and bubbly. Otherwise, cover the skillet and cook over medium-low heat until the cheese has melted.
  • Top with sour cream and sliced scallions, then serve warm.

  • An oven-safe skillet makes melting the cheese under the broiler quick and easy.
  • Stir in diced tomatoes for a little extra freshness and flavor.
  • Pepper Jack adds a spicy kick, while Colby Jack keeps it mild and creamy.
