Ingredients
  

  • 3 c. flour
  • 2 c. sugar
  • 1 c. chopped walnuts
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 3 large eggs beaten
  • 1.5 c. vegetable oil
  • 2 c. banana mashed
  • 8 oz. crushed pineapple undrained

Instructions
 

  • Preheat oven to 350F. Grease and flour two 8-inch loaf pans.
  • In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt. Stir in walnuts and set aside.
  • In a separate bowl, combine beaten eggs, oil, mashed banana, and crushed pineapple. Stir until well-combined.
  • Add wet ingredients to the dry ingredients. Stir until incorporated.
  • Pour equal amounts of batter into each loaf pan. Bake for 50-55 minutes or until a toothpick comes out of the center clean.
  • Cool for ten minutes; remove from pans and allow the bread to fully cool. Slice and enjoy!

Notes

  • For a moist and flavorful bread, use ripe bananas with brown speckles for maximum sweetness and flavor.
  • To prevent the walnuts from sinking to the bottom of the bread, toss them in a tablespoon of flour before adding them to the batter.
  • Don't over-mix the batter; stir until just combined to avoid a tough texture in the finished bread.
