My Auntie JJ's Banana Pineapple Walnut Bread is a unique variation of banana bread made extra moist from the addition of pineapple!

- 3 c. flour
- 2 c. sugar
- 1 c. chopped walnuts
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. salt
- 3 large eggs beaten
- 1.5 c. vegetable oil
- 2 c. banana mashed
- 8 oz. crushed pineapple undrained
Preheat oven to 350F. Grease and flour two 8-inch loaf pans.
In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt. Stir in walnuts and set aside.
In a separate bowl, combine beaten eggs, oil, mashed banana, and crushed pineapple. Stir until well-combined.
Add wet ingredients to the dry ingredients. Stir until incorporated.
Pour equal amounts of batter into each loaf pan. Bake for 50-55 minutes or until a toothpick comes out of the center clean.
Cool for ten minutes; remove from pans and allow the bread to fully cool. Slice and enjoy!
- For a moist and flavorful bread, use ripe bananas with brown speckles for maximum sweetness and flavor.
- To prevent the walnuts from sinking to the bottom of the bread, toss them in a tablespoon of flour before adding them to the batter.
- Don't over-mix the batter; stir until just combined to avoid a tough texture in the finished bread.
