Ingredients
  

  • 2 cups all-purpose flour
  • ½ cup sugar
  • 2 ½ teaspoon baking powder
  • 1 ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 ½ teaspoon salt
  • 2 eggs
  • ¾ cup milk
  • 2 tablespoons butter melted
  • 2 teaspoons vanilla extract
  • 2 large granny smith apples
  • vegetable oil for spraying

Instructions
 

  • In a large bowl combine flour, sugar, baking powder, cinnamon, nutmeg, and salt. Whisk until combined.
  • In a small bowl, combine eggs, milk, melted butter, and vanilla. Whisk until thoroughly combined.
  • Peel and core apples. Cut into small pieces.
  • Pour wet mixture into dry ingredients; stir with spoon or rubber spatula until thoroughly combined.  Fold in diced apples.
  • Cut a piece of parchment paper to fit the size of an air fryer basket.  Preheat air fryer for 7-8 minutes at 400 degrees.
  • To prepare glaze: in a bowl combine confectioners’ sugar, vanilla, and milk. Whisk until thoroughly combined and no lumps of sugar remain.
  • Carefully place cut parchment paper in air fryer basket (basket will be hot).  Using a ¼ cup measuring cup or tablespoon, scoop 3 piles of dough 1 ½ to 2 inches apart in parchment lined fryer basket.  Spray fritters lightly with vegetable oil.  If you have a larger basket more fritters can be cooked at one time.
  • Return basket to air fryer and cook for 5 minutes at 400 degrees.
  • Remove basket and carefully flip fritters with spatula.  Return to fryer and cook an additional 5 minutes.
  • Remove fritters from fryer basket and place on a wire rack.
  • Allow fritters to cool for 2-3 minutes, then dip fritter in glaze, turning to coat.  Return fritter to wire rack to allow excess glaze to drip.

Notes

Fritters can be stored in an airtight container at room temperature for 3-4 days.
Fritters can be frozen! Allow fritter to cool completely, wrap individually in plastic wrap or place several in a plastic bag or airtight container.  Freeze for up to 2 months.  To thaw, place fritter in refrigerator overnight, then remove from fridge an hour before eating.
