It doesn't get much simpler - or more delicious - than Frito Corn Salad. It's creamy, flavorful, crunchy -- and is sure to be the favorite dish of the cookout/potluck!

2 cans whole kernel corn 15 oz each 2 c. sharp cheddar cheese 2 bell peppers one green + one red, chopped ½ red onion diced 1.25 c. Duke's Mayonnaise garlic powder to taste cayenne pepper to taste black pepper to taste kosher salt to taste 1 bag fritos add until desired consistency
Completely drain the whole kernel corn. Finely dice bell pepper + red onion.
In a large bowl, combine whole kernel corn, bell pepper, red onion, cheese, and mayonnaise.
Season, to taste, with garlic powder, cayenne pepper, black pepper, and kosher salt.
Refrigerate for 1 hour. Remove and add crushed fritos. Stir + enjoy!
