It doesn't get much simpler - or more delicious - than Frito Corn Salad. It's creamy, flavorful, crunchy -- and is sure to be the favorite dish of the cookout/potluck!

Ingredients
  

  • 2 cans whole kernel corn 15 oz each
  • 2 c. sharp cheddar cheese
  • 2 bell peppers one green + one red, chopped
  • ½ red onion diced
  • 1.25 c. Duke's Mayonnaise
  • garlic powder to taste
  • cayenne pepper to taste
  • black pepper to taste
  • kosher salt to taste
  • 1 bag fritos add until desired consistency

Instructions
 

  • Completely drain the whole kernel corn. Finely dice bell pepper + red onion.
  • In a large bowl, combine whole kernel corn, bell pepper, red onion, cheese, and mayonnaise.
  • Season, to taste, with garlic powder, cayenne pepper, black pepper, and kosher salt.
  • Refrigerate for 1 hour. Remove and add crushed fritos. Stir + enjoy!
