Hey, y'all! It finally feels like fall here in Kentucky -- and when falls rolls through the Commonwealth, that means one thing and one thing only: it's soup season! While there are many soups that I hope to share with you this season, I wanted to start off with my absolute favorite: my creamy sausage tortellini soup. It's incredibly easy to make, has a multitude of flavors, and always proves to be a crowd favorite. You'll make this each month from here on out, believe me!

Frequently Asked Questions

Should I use hot or mild Italian sausage?

I personally prefer hot Italian sausage, as I think it has more flavor. However, choose the sausage of your liking. If you can only find mild in store, you can add some red pepper flakes and hot sauce to spice it up!

How long does this soup last in the refrigerator?

This soup will be good in the refrigerator for 2-4 days.

Can I freeze it?

Yes, absolutely! This is a great soup for the freezer.

Stovetop or crockpot?

I prefer to make this soup on the stovetop in a large stock pot; that said, if you prefer to use a crockpot for your soups, that is absolutely an option. Adjust accordingly.

I don't like sausage -- can I make a substitution?

Yes! While I think sausage is best in this recipe, chicken would also be delicious. For easiest preparation, you could purchase an already-roasted rotisserie chicken from the store.

Ingredients

  

  • 1 lb Italian Sausage hot or mild
  • 1 package cheese tortellini
  • 1 vidalia onion chopped
  • 1 c. carrots chopped
  • 4 c. chicken broth
  • 2 c. tomato sauce
  • 1 c. heavy cream
  • 2 tbsp. tomato paste
  • 3 c. spinach
  • ⅛ c. flour
  • 1.5 tbsp. Italian seasoning
  • 1 tsp. sugar
  • kosher salt to taste
  • black pepper to taste
  • garlic powder to taste

Instructions

 

  • In a stockpot (medium heat), brown your sausage. Remove sausage from the pot, leaving grease.
  • Add carrots and onions to the grease, cooking until tender. Add flour to the vegetables, stir until evenly coated, and then add tomato paste. Mix.
  • Add in tomato sauce and chicken broth. Stir.
  • Add sugar, salt, pepper, and garlic powder. Stir.
  • Add in tortellini and heavy cream, simmer for 5-10 minutes. Place sausage back into soup, stirring until evenly combined.
  • Taste to check for seasoning adjustments. Stir in spinach, allowing it to wilt. Serve warm and enjoy!
