Almond Apple Cake

Hey y'all! Get ready to enjoy a delightful treat with my Apple Almond Cake. Slightly sweet and wonderfully moist, this cake is perfect for your morning coffee or tea. Topped with fresh apple slices and crunchy almond slices, it offers a lovely blend of textures and flavors that I know y'all will love!

Almond Apple Cake Ingredients

  • 1 c. all purpose flour
  • ⅓ c. almond flour
  • ½ c. light brown sugar
  • 7 tbsp. unsalted butter, softened to room temperature
  • ½ c. milk
  • 2 eggs
  • ½ tsp. almond extract
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. nutmeg
  • ½ tsp. cinnamon
  • ¼ tsp. salt
  • 2 medium sized apples peeled, cored and thinly sliced
  • 1 tbsp. almond slices

How to Make Almond Apple Cake

  1. Preheat your oven to 350°F.
  2. Combine the all-purpose flour and almond flour in a bowl.
  3. In a separate bowl, beat 7 tablespoons of softened unsalted butter and ½ cup of light brown sugar together until the mixture is slightly fluffy. You can use a stand mixer if you prefer. Add 2 eggs and stir until well incorporated. Mix in ½ teaspoon of almond extract.
  4. Add half of the flour mixture to the wet ingredients and gently stir with a spatula until fully incorporated. Add ½ cup of milk and stir a few more times, being careful not to overmix. Sift in the remaining flour mixture, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and ¼ teaspoon of salt, then fold everything gently until a smooth batter forms.
  5. Pour the batter into a greased and lined 9-inch circular baking pan. Spread the 2 thinly sliced apples on top of the batter and sprinkle with 1 tablespoon of almond slices. Bake in the preheated oven for 40-50 minutes, or until a skewer inserted in the middle comes out clean.
  6. Let the cake cool to room temperature before enjoying.
