Hey, y’all! Easy recipes are my passion — and in my recent weight loss journey, I’ve tried to make a few varieties of my classic recipes with a lighter twist. This recipe, my Low Calorie Stuffed Jalapeno Peppers, is just that. The best part? Though they have reduced calories, the flavor is absolutely incredible. No one will know that these are not full-calorie. I know y’all are going to enjoy them!

Low Calorie Stuffed Jalapeno Peppers

Stuffed jalapeno peppers are one of my favorite appetizers — they are perfect to serve as a party food, on game night, or at a cookout. However, my favorite way to eat them is as a side dish on taco night! That’s a game changer, right?!

Low Calorie Stuffed Jalapeno Peppers

Tip: When cleaning/preparing the jalapenos, wear gloves when removing the seeds. After removing, wash your hands and be certain not to touch your eyes!

What causes “jalapeno hands”? Capsaicin! When you cut into a hot pepper, capsaicin can transfer to your skin causing it to feel as if it’s burning. Capsaicin doesn’t actually damage your skin like a heat or chemical burn; it does, however, trigger your body’s pain receptors.

Low Calorie Stuffed Jalapeno Peppers

Looking for the perfect healthy party food recipe? Look no further than my Low Calorie Stuffed Jalapeno Peppers!

Ingredients
  

  • 8-10 fresh jalapeno peppers halved, seeds removed
  • 8 wedges light Laughing Cow cheese
  • 6-8 slices microwave bacon chopped
  • 1/4 c. reduced fat cheddar cheese shredded
  • garlic powder to taste
  • onion powder to taste

Instructions
 

  • Preheat oven to 375 degrees.
  • Cook bacon until crisp, allow to cool + chop.
  • Wash jalapeno peppers, slice down the middle, and remove seeds. Wear gloves during this step, be sure to not touch your eyes, and wash your hands thoroughly afterwards.
  • Combine chopped bacon, Laughing Cow cheese, reduced fat cheddar cheese, garlic powder, and onion powder. Mix until well-combined.
  • Spoon cheese mixture into jalapeno halves and cook for 15-20 minutes. Broil on high for 1 minute or until brown.
  • Enjoy!
