In a bowl, mix together the beef, bread crumbs, onions, chicken stock, egg, Worcestershire, thyme, parsley, salt, pepper, and tomato paste until well-combined. Line a loaf pan with parchment paper and mold the meatloaf mixture into a loaf shape.
Cover the top liberally with ketchup.
Bake uncovered for 65-75 minutes (or until the internal temperature reaches 160F).
Allow to cool for 5-10 minutes, slice and serve warm.
