Ingredients
  

  • 1 lb. ground beef I recommend using 90-10
  • 1 c. bread crumbs I prefer Progresso
  • 2 vidalia onions chopped
  • ½ c. chicken stock
  • 1 large egg beaten
  • 1 tbsp. Worcestershire
  • 1 tbsp. thyme dried
  • 1 tbsp. parsley dried
  • 1.5 tsp. kosher salt
  • 1.5 tsp. black pepper
  • 1 tbsp. tomato paste
  • Ketchup to taste

Instructions
 

  • Preheat oven to 350F.
  • In a bowl, mix together the beef, bread crumbs, onions, chicken stock, egg, Worcestershire, thyme, parsley, salt, pepper, and tomato paste until well-combined. Line a loaf pan with parchment paper and mold the meatloaf mixture into a loaf shape.
  • Cover the top liberally with ketchup.
  • Bake uncovered for 65-75 minutes (or until the internal temperature reaches 160F).
  • Allow to cool for 5-10 minutes, slice and serve warm.
  • Enjoy!
