Ingredients
  

  • 14 oz. smoked sausage sliced
  • 1 onion diced
  • 10.5 oz. cream of chicken soup
  • 2 cans water
  • 10 oz. Rotel tomatoes
  • 2 cloves garlic minced
  • ¼ tsp. red pepper flakes
  • 1 ½ c. rice
  • 8 oz. cheddar cheese shredded

Instructions
 

  • Heat a large skillet over medium-high heat. Add the sausage and onion, cooking until the sausage is browned and the onion is tender.
  • Stir in the cream of chicken soup. Fill the empty soup can with water twice and add it to the skillet.
  • Add the Rotel tomatoes, garlic, red pepper flakes, and rice to the skillet.
  • Bring the mixture to a boil, then cover and reduce the heat to low.
  • Cook for 20-25 minutes, or until the rice is tender.
  • Stir in 1 cup of shredded cheese until melted.
  • Sprinkle the remaining cheese over the top, cover, and cook until the cheese is fully melted.
  • Garnish with parsley if desired, and serve warm!

Notes

  • Long-grain white rice works best for this dish. Avoid instant or parboiled rice, as it may overcook or affect the texture.
  • While the rice cooks, give it a stir once or twice to prevent sticking and ensure even cooking.
  • Adjust the red pepper flakes to your spice preference. Add more for a kick or leave them out for a milder dish.
  • After adding the final layer of cheese, keep the skillet covered for a few extra minutes to allow it to melt evenly and create a gooey topping.
