- 14 oz. smoked sausage sliced
- 1 onion diced
- 10.5 oz. cream of chicken soup
- 2 cans water
- 10 oz. Rotel tomatoes
- 2 cloves garlic minced
- ¼ tsp. red pepper flakes
- 1 ½ c. rice
- 8 oz. cheddar cheese shredded
Heat a large skillet over medium-high heat. Add the sausage and onion, cooking until the sausage is browned and the onion is tender.
Stir in the cream of chicken soup. Fill the empty soup can with water twice and add it to the skillet.
Add the Rotel tomatoes, garlic, red pepper flakes, and rice to the skillet.
Bring the mixture to a boil, then cover and reduce the heat to low.
Cook for 20-25 minutes, or until the rice is tender.
Stir in 1 cup of shredded cheese until melted.
Sprinkle the remaining cheese over the top, cover, and cook until the cheese is fully melted.
Garnish with parsley if desired, and serve warm!
- Long-grain white rice works best for this dish. Avoid instant or parboiled rice, as it may overcook or affect the texture.
- While the rice cooks, give it a stir once or twice to prevent sticking and ensure even cooking.
- Adjust the red pepper flakes to your spice preference. Add more for a kick or leave them out for a milder dish.
- After adding the final layer of cheese, keep the skillet covered for a few extra minutes to allow it to melt evenly and create a gooey topping.
