Ingredients
  

  • 3 bananas smashed
  • 2 eggs
  • c. vegetable oil
  • c. sugar
  • c. honey
  • 2 c. all-purpose flour
  • ¼ tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. cinnamon
  • ½ c. sugar for swirling
  • 1 tbsp. cinnamon for swirling

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease or line an 8x4-inch loaf pan with parchment paper.
  • In a large bowl, mix together mashed bananas, eggs, neutral oil, sugar, and honey until well combined.
  • Add flour, salt, baking powder, baking soda, and cinnamon to the same bowl. Stir until the batter is smooth and no lumps of flour remain.
  • In a small bowl, combine ½ cup sugar and 1 tablespoon cinnamon for the swirl.
  • Pour about half of the batter into the prepared loaf pan and sprinkle generously with the cinnamon-sugar mixture.
  • Add the remaining batter on top and sprinkle again with the cinnamon-sugar mixture.
  • Use a knife to gently swirl through the batter to create a marbled effect.
  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

  • The riper your bananas, the better! Overripe bananas are sweeter and more flavorful, making your bread extra moist and tasty.
  • To keep the bread light and fluffy, mix the wet and dry ingredients until just combined. Overmixing can lead to dense, tough bread.
  • When adding the cinnamon-sugar swirl, be sure not to overmix it. Gently swirl with a knife to create that beautiful marbled effect without blending it fully into the batter.
  • Every oven is different, so check your bread for doneness by inserting a toothpick in the center. It should come out clean or with a few moist crumbs. If it’s too wet, give it a few extra minutes.
  • To keep your banana bread fresh, store it in an airtight container at room temperature for up to 3 days. You can also wrap it tightly in plastic wrap and freeze it for longer storage.
