There's chicken salad and then there's my curried chicken salad. Sweet, savory, and robust in flavor -- y'all will love it!

  • 4 c. cooked chicken diced
  • 1.75 c. good mayonnaise such as Duke's
  • 1.5 tbsp. curry powder more to taste
  • 1 c. whole cashews
  • 1 c. celery chopped
  • 2 green onions chopped
  • 1/4 red onion diced
  • .25 c. raisins
  • 1/2 lime juiced
  • kosher salt to taste


  • If preparing your own chicken, cook via your desired method: boiling, in the oven, or stovetop. Dice chicken once cooled.
  • Add chicken to a large mixing bowl. To the bowl, add mayonnaise, red onion, celery, green onion, lime juice, raisins, and curry powder. Mix until well-incorporated and refrigerate.
  • Prior to serving, stir in cashews. Enjoy!


  • As curry is the main seasoning, purchase a good quality curry powder.
  • If you do not want to make your own chicken, purchase a rotisserie and dice the white meat.
  • Stir in the cashews right before serving. This will ensure that they stay crunchy, adding a wonderful texture to this dish.
