Instructions
Preheat oven to 350F.
Fry the country ham in extra virgin olive oil over medium heat; you will flip once the ham has browned and will cook the other side in the same fashion. Don't overcook as it will become dry. Dice after cooking.
In a pan over medium heat, cook 2 shallots and the minced garlic in extra virgin olive oil until tender. In a mixing bowl, combine beaten eggs with country ham, broccoli, gruyere, sharp cheddar, monterey jack, half-and-half, shallots + garlic, and 1 tbsp. of dijon mustard. Spread the remaining 2 tablespoon of dijon mustard around the inside of the deep dish pie shell. Pour in egg mixture.
Bake for roughly 40-45 minutes, or until a toothpick comes out of the middle clean. Broil for 1-2 minutes to brown the top.
