Ingredients
  

  • 1 frozen deep dish pie shell
  • 4 eggs beaten
  • 3-4 slices fried country ham diced
  • 1 cup broccoli cooked, chopped (I prefer to air fry it)
  • ½ c. gruyere cheese
  • ½ c. sharp cheddar cheese
  • c. monterey jack
  • ½ c. half-and-half
  • 2 shallots
  • 3 tbsp. Dijon Mustard I recommend Grey Poupon
  • Minced Garlic
  • Black pepper to taste
  • EVOO

Instructions
 

  • Preheat oven to 350F.
  • Fry the country ham in extra virgin olive oil over medium heat; you will flip once the ham has browned and will cook the other side in the same fashion. Don't overcook as it will become dry. Dice after cooking.
  • In a pan over medium heat, cook 2 shallots and the minced garlic in extra virgin olive oil until tender. In a mixing bowl, combine beaten eggs with country ham, broccoli, gruyere, sharp cheddar, monterey jack, half-and-half, shallots + garlic, and 1 tbsp. of dijon mustard. Spread the remaining 2 tablespoon of dijon mustard around the inside of the deep dish pie shell. Pour in egg mixture.
  • Bake for roughly 40-45 minutes, or until a toothpick comes out of the middle clean. Broil for 1-2 minutes to brown the top.
