Ingredients
  

  • 1 lb shrimp fully-cooked, deveined, tails off, chopped
  • 1 bell pepper red, yellow, or orange
  • 1/2 vidalia onion chopped
  • 3 stalks celery chopped
  • 1 block cream cheese softened
  • 3/4 c mayonnaise
  • 2 c cheddar cheese shredded
  • 6-8 oz parmesan cheese grated
  • 1 tbsp hot sauce
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp cajun/creole seasoning (such as Old Bay) more to taste if desired
  • chopped parsley for garnish
  • chips or bread for serving

Instructions
 

  • Preheat oven to 400F.
  • Cook the shrimp if they are not already cooked. I recommend buying frozen, high-quality, fully-cooked shrimp to make the recipe easier. If you purchase those, simply thaw, remove tails, and chop. If cooking the shrimp yourself, simply cook in boiling water until the shrimp are pink in color. Do not overcook.
  • Chop all vegetables: bell pepper, vidalia onion, and celery. I like to roughly chop with my food processor (don't over-pulse); however, you can chop on a cutting board with a knife.
  • In a large bowl, combine all ingredients until uniformly mixed. Pour into a seasoned cast iron skillet and spread evenly.
  • Cook for roughly 30 minutes. Remove from oven, garnish with chopped parsley, and serve warm. I like serving this dip with Tostitos® Scoops!® Tortilla Chips, LAY’S® Classic Potato Chips, and/or a baguette.
